🔥 YOUR ORDER STARTS THE ROAST
Most coffee is roasted first, then sold. Adira works the other way — we roast after you order, then ship fresh from California. Your bag hasn’t been roasted yet. It starts with you.

Stefan & Ekaterina
Adira Roaster
We're Stefan & Ekaterina. We built Adira from a kitchen in Sofia to a roaster in California.
I didn't grow up with coffee. It came into my life in my early twenties — through Ekaterina, the woman who became my wife. We learned the craft together in a kitchen in Sofia, obsessing over grind size before we ever thought about a business.
Adira started as the cup we wanted every morning. Never meant to be a 'brand' — just the bag we kept coming back to.

What's actually in Your Bag
Roasted in California. Specialty grade only. Named cooperatives on every bag. Plain-spoken proof, not marketing words.

Brews how you brew. Any method.
You don't need fancy gear or barista skills. Every Adira coffee is profiled to work across methods — pulls a clean espresso, pours bright through filter, holds body in a French press, sits well in milk the next morning. Order whole bean by default, or pick your grind at checkout. Brew it the way you already make coffee.
Roasted the week you order. Not 6 months ago.
Most supermarket coffee was roasted 3 to 12 months before you ever saw it — shipped by the pallet, parked on a warehouse shelf, oxidizing the whole way. Adira gets roasted in California within days of your order and ships within five. You drink the roast, not the memory of one.
Specialty grade only. SCA 80+. No exceptions.
The Specialty Coffee Association scores every coffee from 1 to 100. Anything 80 or above is "specialty grade" — the top tier. Every Adira coffee, every batch, scores 80+. Smooth body, low-acid cup, clean finish — the cupping profile you'd actually want to drink black. No "premium," no "gourmet," no marketing words dressed over commercial beans.
Named cooperatives. Every bag. Every time.
Costa Rica. Colombia. Mexico. Ethiopia. Indonesia. Every cooperative we work with is named — on the label, on the website, on the page. You can look them up. You can read about the farmers, altitudes, processing methods. Most coffee on supermarket shelves is mixed from anonymous lots. Ours never is.
