Adira Colombia is a deeply expressive single origin coffee from Planadas, a small farming municipality in the state of Tolima, tucked into the foothills of the Cordillera Central. The high mountains shape everything — the soil, the rainfall, the cool nights that slow the cherries down and concentrate their sweetness. Washed and carefully sorted, this coffee delivers a cup with rich dark chocolate as its backbone, lifted by tropical notes of mango and ripe peach. The body is full and round, the acidity soft and fruit-forward, and the finish lingers with a clean cocoa sweetness. A coffee that drinks easily black, holds beautifully with milk, and rewards anyone who slows down enough to notice what's actually in the cup.
Sourced from Café del Macizo, a small group of farmers who formed the cooperative in 2003 to share what no single farm could afford alone — knowledge, equipment, processing capacity, and access to better markets. Across 59 lifetime growers, the cooperative pools decades of inherited expertise: how to read this particular soil, when to harvest, how to ferment cherries for clarity instead of speed. The mountains here aren't just scenery — they're the constraint that produces the quality, and the families who farm them have spent generations learning to work with that constraint rather than against it. Roasted at a medium profile to keep the fruit lifted and the chocolate honest, Adira Colombia is a cup that tells you where it came from in the first sip.

Real cups, real kitchens — @adiracoffeeus
What people are saying
New in the U.S. — early customers are trying Adira now. Every bag is roasted to order in California, and if a cup isn’t right, Stefan answers your email personally.
WHO ROASTS THIS
Two Bulgarians. One American coffee aisle.
We’re Stefan and Ekaterina. Coffee came into our lives in Sofia — we learned the craft together in a small kitchen, long before we ever thought about a business.
Then came the American coffee aisle. Sixty bags on the shelf, most asking you to trust the label — half called “premium” with nothing to back it up. None of them told us who grew the beans, or were roasted for the cup in front of you. We couldn’t find the coffee we wanted — so we built it.
Specialty-grade only. Named cooperatives on every label. Roasted in California within days of your order. Not a brand — just the bag we’d actually brew, the one that should have been on the shelf all along.

Something delicious for everyone.
Smooth, named-origin coffee crafted to elevate your daily ritual.
Roasted after you order. Not before.
Most coffee sits on a shelf for months before it reaches you. We roast every bag in California within days of your order — so what arrives is the cup the roaster meant, not what's left of it.
Two Bulgarians. Real names. Real bag.
Adira started as the cup Stefan and Ekaterina wanted to drink every morning — built in a small kitchen in Sofia, now roasted in California for here.
Every bag carries their names. Every batch passes their taste.
Five cooperatives.
CoopeAgri (Costa Rica), Café del Macizo (Colombia), Alma de Chiapas (Mexico), Oromia (Ethiopia), and Sumatra smallholders.
We name everyone we buy from. If we can't, we don't roast it.
