Sixty bags. Zero answers.
First time in a Whole Foods. We picked up bag after bag looking for one we'd actually drink. We left with nothing.
When was it roasted?
Industry average: 3–12 months on the shelf before you brew a cup. By then, the roaster's intent is a memory.
What grade is it?
None of these words has a legal definition. The only real grade is Specialty — SCA 80+. Most supermarket bags don't make the cut.
Whose farm is it from?
No farm. No cooperative. No person. The bean passed through four hands before it became a label that tells you nothing.
Three things every bag should answer. Almost none of them do.
Stefan & Ekaterina — Sofia, Bulgaria
Cupping every lot before we say yes
Green beans from named cooperatives
Roasted to order — California
We're Stefan & Ekaterina. We built Adira from a kitchen in Sofia.
I didn't grow up with coffee. It came into my life in my early twenties — through Ekaterina, the woman who became my wife.
We learned the craft together. Slowly. In a small kitchen in Bulgaria, before we knew anything about cupping scales or processing methods. We obsessed over grind size before we obsessed over a business.
Adira started as a small roastery at home. Never meant to be a 'brand'. Just the cup we wanted to drink every morning.
Today, customers in Bulgaria have rated us 4.8 out of 5 across 154 reviews.
This year we crossed to America.
We walked the coffee aisles. Picked up sixty bags. Most without a roast date. Half called 'premium' — a word with no legal meaning. None told us who grew the beans.
So we did what we did at home — only this time we built it for here. Specialty grade only. Roasted in California. Shipped in five days.
The bag we'd drink in Sofia. Made for the American kitchen we built it for.
Adira Blend
Smooth. Chocolate-leaning. Low-bitter. Works black. Works in milk. Tomorrow morning and the morning after. The Blend we'd brew in Sofia — made for your kitchen here.
Things you'd ask in our kitchen.
Short. Real. No fluff.

Easy starting point
Will I actually like it?
If you like coffee that's smooth, chocolate-leaning, and not bitter — yes. Adira Blend is the easiest way in. Want lighter, fruitier, or origin-specific? Take the 2-min quiz and we'll match you to one of our 5 named-cooperative single origins.
🇺🇸 Roasted in CA 📦 Arrives in 5–10 days -
Roasted to order
Is it really fresh?
Every bag is roasted in California after you click 'order'. Shipped within five days. Lands in your kitchen within 7–10 days from roast. Most supermarket coffee sits 3–12 months before you ever see it.
-
Above commodity
Why does this cost more than supermarket coffee?
Because supermarket coffee was roasted a year ago and shipped by the pallet for $6 a bag. Ours is fresh, small-batch, with growers paid above commodity. You're paying for the difference.
